Orma’s Panettone

Description

A Christmas that smells of family, of childhood memories and of getting together, that wants to be a mix of cultures that have met and liked each other, giving life to a Christmas cake that recalls the classic leavened cake but with exotic overtones, a triumph of arequipe with a salty aftertaste, cinnamon and citrus fruits.

“At first I thought of inserting spices, such as cinnamon and cloves, reminiscent of my grandmother who used to make decorations with these scents all over the house. Then I wanted to add figs because during Christmas I used to eat candied figs with Arequipe inside. The figs were those of my great-grandmother who had a big tree in the courtyard and which, being at an altitude of 2600 metres, never reached full ripeness. While they were still green they used to cook them with lots of flavourings and candied them and stuffed them with Arequipe, which is like a salted caramel.

From these memories comes a leavened product that brings together our two traditions, that is, my idea of Christmas with Vincenzo’s.”

Part of the proceeds will be donated to charity for the Dynamo Camp association to which we have long been linked.
